Green Beans with Bacon and Onions
- 1 lb. Fresh or Frozen Trimmed Green Beans
- ½ lb. Bacon, sliced
- 4 Garlic cloves, coarsely chopped
- 1 large Shallot or small White Onion, finely chopped
- Salt and Pepper to taste
If utilizing frozen green beans, boil for 8 minutes prior to starting recipe to thaw and soften. If using fresh green beans, prepare as follows: first trim green bean ends. Prepare bacon: arrange bacon in a deep skillet over medium heat. Cook bacon until crisp, turning once, about 5 minutes total. Remove bacon from skillet, slice into small pieces, and set aside. Add onion and/or shallot and garlic to the skillet and saute until tender, about 5 minutes. Return green beans and bacon to pan and saute for 2 minutes to coat with onion and garlic mixture. Sprinkle with salt and black pepper to taste. Serve immediately.
